Quarantine Kitchen: Anthony’s Amazing Brownies

Mother and son perfect chocolate and peanut butter sweet treat over the years

In The Dominion Post’s ongoing Wednesday feature, Quarantine Kitchen, we highlight dishes prepared by readers, staffers and chefs at our local restaurants, in an effort to keep us connected through food.

Today, we bring you a tried-and-true favorite from one of our own, as Advertising Account Executive Anthony Nacarate shares with us his insanely popular brownie recipe.

“I made these brownies to bring in to the office and they were a huge hit,” Nacarate said. “I was asked to make them again for Quarantine Kitchen just so my coworkers could reap the benefits.”

And now, you can, too.

But this recipe hasn’t just found Nacarate friends at the office — it’s been a source of mother-son bonding for years.

“I’ve had this recipe for over 10 years,” he said. “My mother and I used to make these brownies together all the time when I was younger for athletic bake sales or school events. We perfected this recipe together (although my mother likes to skimp on the butter).”

Which, no offense, Mom, is something Nacarate says you should definitely not do.

“Tips: Don’t skimp on the butter! The butter is what makes these brownies gooey and delicious!,” he insisted.

Butter, however, isn’t the only standout ingredient. The peanut butter chips also put these brownies in a class of their own, Nacarate said.

“The brownies are gooey and not overly sweet,” he said. “The peanut butter chips really make them stand out. It’s hard to beat the combination of chocolate and peanut.”

 Indeed, Anthony. Indeed.

ANTHONY’S AMAZING BROWNIES

  • 2 1/2 sticks of butter
  • 2 cups of sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 cup flour
  • 3/4  cup cocoa powder
  • Pinch of baking powder
  • Pinch of salt
  • 1 bag Reese’s Peanut Butter chips

Pre-heat oven to 325 degrees.

Melt butter in microwave in medium-size mixing bowl.

Grease a 13-by-9-inch cake pan (I use some of the melted butter).

Add sugar and vanilla and mix well.

Add eggs and combine one at a time.

Mix in flour, cocoa, baking powder, and salt.

Stir in peanut butter chips.

Transfer mixture to cake pan and shake pan to distribute mix evenly.

Bake at 325 degrees for 30-35 minutes.
