WIC Kitchen: Peach out with these tasty and healthy summer dishes

Have you ever grilled peaches? Maybe adding a dip combining ricotta, cream cheese, butter and honey that adds flavor while allowing the peaches to still shine through?

If this sounds tasty, WIC Kitchen has the recipe for you. Honey & Thyme Grilled Peaches with Ricotta can be served as a snack, a side dish or a dessert. With peaches in season in August, this is the perfect time to try this recipe that is easy to make.

Peaches are nutritious and help the body in so many ways. Vitamins C and A as well as antioxidants provide immune system support. The soluble and insoluble fiber promote gut health and the fiber and potassium aid heart health. They are also an excellent source of beta-carotene, which helps maintain sharp vision and prevent cataracts.

Grilled peaches are just one of many ways to enjoy this fruit. In addition to being served fresh, they can be baked in pies and cobblers and they also make a fabulous smoothie.

This Turkey Apple Cheddar Sandwich is a great way to pack tasty and nutritious ingredients in between two pieces of bread. Arugula and apples are both highly nutritious, low-calorie foods that make a great sandwich. Pairing the peppery taste of the arugula with the sweet crisp apple provides a symphony of flavor variations on your tongue. Arugula has lots of vitamin A, K and C, while apples offer excellent hydration and dietary fiber.

These dishes go together to make a great lunch or light dinner, but also can stand alone as delicious summer treats.

Honey & Thyme Grilled Peaches with Ricotta

4 ripe, stone-free peaches *

2 Tbsp. melted butter

4 Tbsp. ricotta cheese

2 Tbsp. cream cheese, room temperature

1 Tbsp. butter, room temperature

2 Tbsp. raw honey

Honey to drizzle

Thyme to sprinkle *

Halve the peaches and brush lightly with melted butter. Heat up a grill or griddle pan and sear the face of the peaches until soft with nice grill marks. If using a grill, be careful not to let them burn. Combine the ricotta cheese, cream cheese, 1 tablespoon of butter and raw honey and mix well. To assemble, spoon filling into the peaches and drizzle with extra honey and sprinkle with some small thyme pieces.

Turkey Apple Cheddar Sandwich

2 slices bread *

3 slices oven roasted turkey breast

2 slices Havarti cheese or cheddar *

1 small apple *

1/2 cup arugula *

2 tablespoons mustard

1 tablespoon light mayo

6-8 dill pickle coins

6-8 favorite chips (optional)

Fresh lemon juice (optional) *

Spread a thin layer of mayo on a piece of bread and add a few slices of cheese on top. The thinner the cheese, the better. On the other slice of bread, spread mustard and layer thinly sliced apple slices on top. Add turkey breast on top of the apples. Add pickle coins. To help hold this hardy sandwich together, you can add another squirt of mayo. Toss the arugula in some fresh lemon juice and salt and pepper before adding it on top of the turkey. For extra crunch, add chips to the sandwich on top of the arugula.
